cakes of salted sardines/viska pogaca/





Write a few words about the history of the recipe for a meal is very important!
Through the story of the food we learn about the country and its inhabitants.
Croatia is small country on the Adriatic coast,country with more than 1000 islands,with calm,clear,warm sea.
Stone Coast, with little arable fields..People always lived by the gifts of the sea.
Cultivate fields are given the fruits of olive and grape, and the sea is fed with an abundance of fish, shellfish and work!

Expensive and rare fish is sold to the rich and the poor ate anchovies!
Sardine is food of the poor!
You can prepare sardines cooked, fried, fried.
Stored for a long period so that the sardines have agreed to a major sea salt, or put in the mix of vinegar and onions.

The special occasions are our grandmothers cooked cakes of salted anchovies!

RECIPE


it is necessary:

10 pieces of salted anchovy fillets
handful of capers
2 large red port
half cup olive oil
2 cups tomato pieces
laurel leaf
little rosemary
bunch parsley
head of garlic


dough:

4 cups flour
1 tablespoon olive oil
fresh yeast
1 teaspoon sugar
salt

Dough well mix with hands and leave to rise.

Make fill, gently fry chopped onion in oil
add water to soften onion
now add tomatoes and cook for 15 minutes.
add spices and a little boil, salt if desired!

Divide the dough, roll out, put in the form of baking, pour sauce ...

Now agree sardine fillets and cover the other part of dough.

all is here,herbs,tomato,onion


                                me working,dough have to be hard
                               

                               
 and just a little swimming in between...lol...

Now only add all in oven and bake it!!!
Serve it warm or cold with glass of red wine!!!

Lamb a la Split-Foscarini family recipe


  Lamb as it was my grandmother cooked!

Here is an old yet new recipe for preparing lamb!

And who is in fact not an admirer of lamb prepared in this way will the love.


Ingredients: / 6-8 persons /

    1st  1 leg of lamb about 2 kg.
    2nd  10 dag smoked ham
    3rd  onion
   4th   pepper
    5th   salt
    6th   1 dl oil
    7th    20 dag red port
    8th    1 tablespoon tomato puree
    9th    1 dl red wine
   10th    0.5  PROSEKA
  11th     2 tablespoons vinegar
   12th    celery and parsley
   13th    bay leaf
   14th    rosemary
   15th    2 tablespoons flour
   16th    200 grams of dried plums

PREPARATION:


     * But wash, remove the bone and obtained a large piece of flesh, salt, pepper, rub with garlic
     * Next, spread a piece of meat, arrange ham, make roll, and the resulting roll if possible tie at the end of cooking and baking.
     * The resulting roll by turning on the bake pan in hot oil.
     * In the meantime
     * Put in a pot, kill more onion to easily add water when the onion is almost entirely softer add plums pitted,
     * A little cook to soft plums
     * Now add the gridded carrots
     * Add water until tender, not carrots, with a piston lawful  mixer and add all other ingredients listed / except flour /
     * Put the fried meat, or meat add water and cook in the vessel.
     * When the meat is tender, remove it Take, cut into slices and return to sauce.Now add an flour, try it, add spices if needed and cook just a little bit without interference.

This wonderful dish serve with classic gnocchi or wide noodles with the spinach!

BEEF MEDALLIONS WITH SOUR CREAM SAUCE

BEEF MEDALLIONS WITH SOUR CREAM SAUCE
Ingredients:
2 pounds Filet of beef
3 tablespoons Butter
1/4 pound Mushrooms --thin sliced
1 tablespoon Shallots --minced
2 tablespoons Red wine vinegar
2 tablespoons Capers
1 cup Sour cream
1 tablespoon Dill chopped fresh



Directions:
Trim all fat from beef. Cut the fillets into 12 crosswise pieces of equal size, about 1/2-in. thick. Melt 2 tbsp of butter in a skillet large enough to hold the pieces comfortably without crowding. Add the pieces of filet and cook over moderately high heat about 35-40 sec. The pieces should be nicely browned on one side. Turn the pieces and cook about 30-45 sec. on the other side. Immediately transfer the pieces to a warm serving platter. Add the mushrooms to the skillet and stir.

Add the shallots and cook about 15 sec. Stir in the vinegar and capers.

Add the sour cream and stir well. Let the sauce come to a simmer.

Add any juices that have accumulated around the steak on the serving platter. Remove the skillet from the heat and swirl in the remaining butter. Pour the sauce over and around the steak and sprinkle the dill on top
